Some strange things come out of not eating bread. Especially when most of the items in the house are bread related.
I rummaged through the kitchen a bit, and there were no tortilla shells in sight. I was going to make a wrap. No luck. So I put the cheese, tomatoes and smoked salmon on rice cakes instead.
It's an interesting taste explosion that I'm not really sure I dig. But the cottage cheese and pineapple is good, as always.
Anyone have any brilliant, and simple, non-bread meal ideas?

I had my first lettuce wrap while visiting Cali. This is my version of a mexican lettuce wrap, it makes 3 or four servings.
Mix 1/4 cup flour with a 2 tbsp corn meal then add half a pkg of taco seasoning.
Wet 2 or 3 chicken breasts or thighs (pounded flat) then dredge in the taco seasoning flour mix.
Set a frying pan to med high, add 1 tbsp oil then quick fry the breasts about 7 minutes per side. Remove chicken from pan, cool then chop or shred into bite sized pieces. Set aside.
Add a little more oil to the pan then saute all manner of chopped veggies: onion, red peppers, corn, black beans....the more the merrier. Once, all your veggies are soft, throw in half a jar of your favorite salsa, stir then let heat through for two minutes. Reduce heat then add the cooked chicken to salsa veggie, mixture (you can also add 1 cup steamed rice at this point) heat everything through on low.
Rince and pat dry large, leaf lettuce leaves then lie them flat. Select two leaves, then stack one on the other.
You can spread one tbsp of non-fat sour cream on the inner leaf then spoon a fair amount of meat veggie mix into the leaves, add some low fat cheese and diced fresh tomato's if you have on hand. Roll up like a waffle cone, one end closed with the other full of yummies. Secure with a toothpick.
There should be enough meat for several meals. You can re-heat the veggie mix in the microwave then wrap when ready to eat. The trick is to avoid loading up on the carbs. The rice can be cut in half and try to keep the cheese to a minimum. Eat all the veggies you want. They're filling and non-fat.
